I love the shrimp scampy appetizers usually served at steak houses, but I can't find a good seasoning for the shrimp.

Shrimp Scampi is an easy recipe to make, saute shrimp for about 3 minutes in butter, add minced garlic, lemon juice, and chopped parsley, swirl around and serve

here is my recipe, use 1 part white wine, same volume of butter ( so when i cook it is 1 lb of butter, 1/2 bottle of white wine, 2lbs of shrimp.) than add about 1-2 tb of minced or finly chopped garlic, and parsly flakes. about 1-2 tb. and i cook it in the oven on broil or at 450 but it dose take a while to cook, till all the shrimp are warm.

Thanks for the recipe.  I am always looking for different recipes.  Q: Do you think I can use Olive Oil to cut down on Calories and Saturated Fat instead of butter?

I would not use oil, butter is the flavor, you don't eat all of the butter, the shrip just need to be covered in liquid, if your that concerned use more white wine, and olive oil is prity high in fat as well.

Although it may not be good in the scampi, olive oil is about the best fat a person can consume. The fat it has is monounsaturated fat, which is good for you, it raises HDL cholesterol (the good kind) and lowers LDL (the bad kind) Olive oil is linked to lower heart disease, bad cholesterol and other cardiovascular disease, whereas butter, a heavily saturated fat is what clogs arteries and gives people heart attacks. Butter contains 66% saturated fat as opposed to the 14% that olive oil has. You should never worry about eating olive oil. It is not that it is not bad for you, it's that is actually healthy.

For good seafood, you should try Chinese food.  Generally speaking, Chinese recipes for seafood usually have lots of great ideas.

This is a nice shrimp dish because the sauce isn't very heavy at all. A lot of lime juice, olive oil and garlic simply flavor these shrimp.

Ingredients

1/4 C. olive oil
1/4 C. lemon juice
3 Tbs. chopped fresh parsley
1 Tbs. minced garlic
Ground black pepper to taste
1/4 tsp. crushed red pepper
1 1/2 lb. raw, cleaned, shelled shrimp

Directions

In a plastic or glass bowl, combine the olive oil, lemon juice, parsley, garlic, black pepper and crushed red pepper. Stir in the shrimp and marinate for 20-30 minutes. Preheat grill. Remove shrimp from the marinade, and thread onto skewers. Grill for about 2-3 minutes on each side, or until done.

It also doesn't take too long too cook. It's great as a meal or an appetizer.

I like this one that uses garlic and lemons.
Add some fresh garlic cloves and lemon to your shrimp to make the best shrimp scampi around.

Ingredients

2 lb. large raw shrimp
1/2 C. (1 stick) butter
1 tsp. salt
6 cloves garlic, crushed
1/4 C. chopped parsley
2 tsp. grated lemon peel
6 lemon wedges
2 Tbs. lemon juice

Directions

Remove shells from shrimp, leaving shell on tail section only. Wash under running water and drain on paper towels. Melt butter in 13x9x2-inch baking dish in oven. Add salt, garlic and 1 tablespoon parsley, mix well. Arrange shrimp in single layer in baking dish. Bake at 400 degrees uncovered for 5 minutes.

Turn shrimp, sprinkle with lemon peel, lemon juice and remaining parsley. Bake at 400 degrees for 8 to 10 minutes or just until tender.

Arrange shrimp on a heated serving platter. Pour garlic butter over all. Serve over rice and garnish with lemon wedges.

Serves 6 to 8.
