I have a recipe for fudge called 5LB fudge - it calls for a pound chocolate candy bar. I wondered if I could substitude a dark chocolate bar instead of the milk chocolate? Here is the recipe -
Combine 4 1/2 cups sugar, 1 large can evaporated milk, 3/4 cup margarine in large pan on stove on medium heat for 5-7 minutes stirring contiuosly.
In a large mixing bowl combine 1 lb broken up milk chocolate bar, 12 oz package chocolate chips and 1 pt jar of marshmallow creme. Pour the heated mixture into bowl and combine (Mixer works the best here.) until all is dissolved. Then add 2 teaspoons vanilla and 2 cups of chopped nuts. Pour into a well-buttered 9X13 pan and refrigerate at least 2 days before cutting.
I wasn't sure if the dark chocolate had the same amount of fat as the milk and didn't want to go to this much work if it wasn't going to turn out. The fudge is wonderful and while it is called 5 lb, it is so rich you can't eat much at a time. Thanks
