Hi Jimmy, my favorite crock-pot dinner is I get a 3-4 lb beef
roast, put one glass of water and envelope of lipton dry
onion soup. mashed potatoes, corn or green beans or both
on the side. I did`nt explain I just put the three things in
the crock-pot and cook for about 4-5 hrs. it is so tender.
and the juice you can make a very good gravy. as Mr Food
would say (OH ITS SO GOOD).

Bigjim, I do something similar, except on top of the chuck roast I empty a can of cream of mushroom soup, then top it with the envelope of Lipton's. If I want LOTS of gravy I add a bit of water. But you are right...it's SO GOOD with mashed potatoes!!! The soups are salty enough, so don't add more salt!

I use this one all the time, especially during the holdiays when I have a lot of family in from out of town.
Start this the night before and a unique breakfast will be ready for you in the morning.
Ingredients
1 32 oz. bag frozen hash brown potatoes
1 lb. of bacon diced, cooked and drained or 1 lb. cooked ham, cubed
1 medium diced onion
1 green bell pepper diced
1 1/2 C. shredded cheddar or Monterey Jack cheese
1 dozen eggs
1 C. milk
1 tsp. salt
1 tsp. pepper (more or less to taste)
Directions
Place a layer of frozen potatoes on the bottom of the slow cooker, followed by a layer of bacon then onions, green pepper and cheese. Repeat the layering process two or three more times, ending with a layer of cheese. Beat the eggs, milk and salt and pepper together. Pour over the Crockpot mixture, cover and turn on low. Cook for 10-12 hours.

This sounds good for a "breakfast" supper, too! How many can you serve with this? Thanks for the recipe. I'll try it and let you know how it goes in the South!
