Hi.. I am cooking Mahi Mahi filets for dinner with veggies and rice.  I was just wondering if you have any suggestions for cooking the Mahi Mahi.

Hi,

With fish I like to keep it simple and let the delicate flavors of the fish stand out. I don't use thick sauces or breadings. I would saute it in olive oil and fresh herbs of your choice and finish by sprinkling it with a citrus juice. I know this sounds simple, but it is the best way to prepare the fish. You can also grill the fish over medium heat and finish with lemon juice and herbs. Serve alongside some fresh veggies like asparagus with hollandaise

Thanks Jimmy!   I took your advice and it was great...   And this is my favorite side dish !      "asparagus with hollandaise "  Last night I did Grilled Salmon with Emerils Bayo Blast (lightly) for seasoning and some pan seared scallops  with a little Thyme, Garlic, Kosher Salt and Pepper and then finished them off with 1/2 cup of Dry Vermouth.   It was  fantastic.. Served a side of Wild Rice with Steamed Mixed Veggies.
