Scott's egg omelette recipe talks about cooking lardons.  What are lardons?  I don't see them in the ingredient list either!?!?!?

lardons are the way the bacon needs to be cut, it is basically dicing the bacon. Lay the bacon out and slice it into 1/2 inch pieces.
