I am having a lunch party soon and I would like to make roast beef that can be sliced for either a sandwich or eaten alone.  What cut of beef do I use?

The rib roast (prime rib) is the best cut to use, however it is a little pricy, but if you are going to the trouble to prepare your own roast beef instead of buying one, than i certainly suggest going with the rib roast, the best cut for the job. Good luck and remember to let the roast rest for 10-15 minutes before carving to allow the juices to recirculate through the meat.
