whole wheat cookies?

My other half and I have been trying to make whole wheat cookies, but when they come out of the oven they are more like muffins than cookies. any idea why? is it the whole wheat flour we're using (it's not powdery like white flour), or could we be leaving them in too long? any help would be greatly appreciated. thanks!

Whole wheat flour can't rise as well as white flour. Whole wheat flour doesn't have as much gluten or protein as the white flour so it is going to not have as much spring, also, whole wheat grains have jagged edges and that deflates the dough instead of letting it rise. So while they are much healthier, whole wheat cookies just aren't going to be as soft and chewy as cookies made with white flour. Hope this helps.   Jimmy
