I am a fairly new cook and I have a very basic question. If a recipe doesn't state whether to use the midle or bottom level in the oven, do you assume that they mean the middle position? Is the middle position the most common position for baking?

I would definitely use the middle unless specified, rotate whatever you are cooking halfway through the cooking time for more even baking.
