Leftover bbq pork recipes

I baked a pork butt in bbq sauce and have a lot leftover. Do you have any suggestions for a leftover dish? I was thinking rice, cheese, veggies, but couldn't think of what to put together. I'm usually good at whipping up something with leftovers. But the pork has me stumped, I must admit. LOL Hope you can help.

I smoke pork all of the time in the spring and summer, when I have leftovers, I like to make (besides bbq sandwiches) tacos with the meat, also it is great in a soup or stew. I once made a pasta from the bbq and it turned out nice. Make a cream sauce with cream and a little bbq sauce, not to much, just enough to make the cream taste spicy; toss with cooked pasta (any shape, I used angel hair) and add the bbq. Thre is a local bbq shop that has a salad topped with bbq and it is really good. BBQ baked potatoes is another idea. Good luck, Chef Jimmy
